Ok I don’t want to sound vaingloury, but I named this cake because, to me, it’s the pefect chocolat cake, my favourite, the one that makes my head spin, which makes me want to dip in again and again putting a smile on my face each and every time. And how much recipes have I tried…but this one just blew my mind as soon as I tried it ! Indeed when I bake a cake without butter but mostly without sugar, I am always scared something is going to miss, that it might be dry or tasteless.

This Parfait really doesn’t need anything else, so moist, almost heart melting, the almond and the chocolate sparkle together and having no sugar makes the taste explode.

Enough talking, I am not going to hold you back longer! Let’s simply give it a go…

The chocolat parfait, sugar & fat free

Temps de préparation : 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 180°C

Serving Size: 8 slices


  • 150 gr dark chocolat square
  • 300 gr soya cream
  • 2 eggs (at room temperature)
  • 75 gr wholemeal flour
  • 5 gr baking powder
  • 60 gr almond meal


  1. Heat the cream and pour it on the chocolate.
  2. Whisk until it's all combined.
  3. Add the eggs and the powders.
  4. Transfer into previously covered with baking paper mould of 22 cm.
  5. Cook for 20 minutes at 180°C.
